Protein cookies! How to make this healthy vegan treat at home

As a professional model and fitness blogger I always need to stay in shape – but I’d never deprive myself of a sweet treat.

That’s where this healthy protein cookies recipe comes in!

You can whizz up a batch in 40 minutes (allowing 20 minutes prep time and 20 minutes in the oven).

They’re totally natural, vegan, and protein-packed with each cookie containing around 10g of protein.

I’ve always loved baking but I decided to develop a recipe using protein powder. As a qualified PT, I know that consuming sufficient as this can be of prime importance to achieving your fitness goals.

Whether you want to sculpt a bikini fitness body or recover more efficiently after a workout, protein powder can be a very useful addition to your diet.

As I discovered, you can do much more with protein powder than simply mix up protein shakes.

Chocolate or vanilla protein powders (such as Missfits) add a fantastic indulgent flavour so you’d never guess these protein cookies were so good for you!

I recommend enjoying a few of them as a post-workout treat, washed down with a protein shake.

Ingredients

100g porridge or jumbo rolled oats
100g plant-based protein powder (such as Missfits)
Two large tablespoons nut or seed butter
20g chia seeds
80ml syrup such as agave, maple or Sweet Freedom
Broken up Green & Black’s 70% dark chocolate or chopped up Medjool dates
200-400ml plant-based ‘milk’ such as soy, almond or hazelnut, mixed with water to desired dough-like consistency

Method

Put the oats, Multitasker vegan protein powder, chia seeds, nut or seed butter, syrup, chocolate chips or chopped dates and the plant milk in a food processor or mixing bowl, then blend to a cookie dough texture.

Put small, flat balls of the mix on a baking tray lined with baking paper

Bake at 180℃ for 15-18 minutes

Take out of the oven, wait for them to cool down a little, and enjoy!
